|Recipe||Classic Steak Sandwich|
2oz Rib Eye Steak
1 x Ciabatta
5 tablespoons of olive oil
1 tablespoon of caster sugar
2 sticks of thyme
1x Large Spanish onion
3 tablespoons of mayonnaise
1 clove of garlic
1 tablespoon of Dijon mustard
1 handful of rocket leaves
Salt and pepper
|Place your steak on a chopping board and remove any excess fat with a sharp knife and discard. Lightly season with salt and pepper and a teaspoon of olive oil. (On both sides)
Preheat your lined griddle pan with no oil on a high heat until it is smoking hot. At the same time heat 3 tablespoons of olive oil and a small sauté pan.
Grate one clove of garlic, pick 2 sticks of thyme and mix with 1 teaspoon of olive oil. Then rub into the ciabatta.
Finely slice a whole onion into small crescents ensuring you remove the core of the onion.
Add the sliced onion to the hot oil and leave on a low heat at the same time add the steak to the griddle pan. (Do not move the steak).
Leave steak for precisely 2 minutes then turn over.
Toss your onions ensuring the soft and going golden brown add you sugar and salt and toss twice ensuring the caramelise.
Quickly mix your mayonnaise and mustard and wash your rocket leaves in cold water.
After a following 2 minutes remove your steak from the pan and leave to rest on a wire rack.
Quickly wipe the griddle pan a place back on the heat once smoking hot place your ciabatta on the pan for 20 seconds on each side (outside of the ciabatta first) then the centre.
The remove the ciabatta and onions onto the wire rack.
Then put this little delicious selection together.
Slice steak at an angle thin slices preferably should be nice and pink in the centre. Leave to rest again.
Rub the mayonnaise and mustard mix on the bottom of the ciabatta then the sweet onions then the steak finally the rocket.
Push down tightly on the ciabatta pushing out any excess juices then slice diagonally in half.
Perhaps serve with some fries then look at your sandwich and say let’s do this.
